Tilapia, Tuna, Catfish and Orange Roughy.

Lisa and I are kind of burnt out on shrimp and salmon, so we’re trying some new seafood this week. Monday I made blackened Tilapia and it was excellent! That was the first time I’ve had Tilapia, and I thought it was a very good fish. Very healthy, too. Blackening seafood is a smoky affair: I had to open up a bunch of windows and the back door and the house still filled with smoke, but it was worth it! I’ll have to try blackening on the grill next time. Tonight I’m making Yellowfin Tuna steaks. I don’t know how I’m going to prepare them yet, but it should be wonderful. Next week I’m going to try some Catfish and Orange Roughy.
