Salmon and Orange Roughy.

Last night for dinner I made my Cilantro Salmon recipe with a huge side of broccoli. I modified the recipe slightly and substituted a few sun dried tomatoes for the fresh tomato. I also spiced it up a bit with a few shakes of ginger and red pepper. It was extremely good! If you like cilantro and salmon, be sure to give that recipe a try – you won’t be disappointed!

I’ve been pretty burnt out on cod, so lately I’ve been eating Orange Roughy for a welcome change. Roughy is a really tasty fish, and is pretty much nutritionally equivalent to cod (an 8 oz fillet contains 40 grams of protein, 2 grams of fat and no carbs). I prepare Roughy the exact same way I prepare cod: I squeeze fresh lemon juice directly on the fillet, sprinkle it with garlic powder (or fresh chopped garlic if I have time), add a bit of salt and lot of pepper and then wrap it completely in foil. I throw the foil pouch in the toaster oven at 350F for around 12 minutes and serve it with broccoli and brown rice.

Now that I’ve been back on my normal diet for a few days, I’m starting to feel more like myself. I’ve been sleeping well and waking up feeling well-rested and a little leaner each day. It’s taking awhile to bleed off all the water weight I gained over the holiday weekend. Even this morning I’m still a little bloated, but nothing like I was on Monday or Tuesday. By tomorrow I’m confident that all the post-cheat meal bloating will finally be gone.
