Energy crash on yesterday’s ride; New recipe: Chicken and Lime Thai Stir Fry.

Yesterday’s bike ride went pretty good, but when I attempted my 1-mile speed run I bonked hard. I was feeling fine, but about halfway through I just lost all my energy. I went a few more miles at a slower pace, and my energy returned after about 10 minutes. Weird. I cut through the vacant land on the way home and felt great. I’m going to ride again this morning and I’m determined to shave another second or two off my best time.

Chicken and Lime Thai Stir Fry

I’ve got another recipe for you guys today. Last night I made a chicken and lime stir fry that came out absolutely amazing! This dish has a lot of fresh basil in it, and so it tastes like what I would describe as a Thai pesto. Here’s the recipe.

By the way, if you like to make stir fry and are doing it without a wok, I highly recommend getting one. I use my wok all the time, and it really is the perfect pan for this style of cooking. Now if I could just learn to use chop sticks.

I told you guys I’d be posting a lot of new recipes, and I’m going to continue to do so! I’ve really been enjoying trying all these new dishes. I’ve even inspired Lisa to do some cooking, which I never thought I’d see. She said she’s going to make me a rum chicken this weekend. I love cooking, but I have to admit it’s going to be pretty cool to not have to cook for once!

Tonight I’m going to make some kind of shrimp, possibly with pasta. I’ve been eating so much brown rice lately that a change in carbs will be nice. If it’s good, I’ll have the recipe for you tomorrow.
