Grilled Burgers with Bacon and Caramelized Onions

I decided to make the new Grilled burgers with applewood smoked bacon and caramelized onions recipe I posted yesterday again last night. My original recipe came out incredibly good, but I knew there were some tweaks I could make that would make it even better! The small changes I made really did improve on an already incredibly tasty burger, and so I modified the recipe I posted yesterday. The changes were small, but made a big difference. First, I thought a little garlic would go well, so I rubbed the toasted hamburger buns with raw garlic cloves (like you would do if making bruschetta). Second, I axed the mustard and instead used a simple sauce made with equal parts ketchup and creamy horseradish. When I first made this burger I thought about using horseradish, but I didn’t think it would work. Lisa had the idea to combine the horseradish with ketchup, and she was right on target; the sauce provided the perfect spicy kick and a great flavor! Finally, I used cheddar cheese instead of the white American cheese. I’m calling this one done now. 🙂

Tonight for the first time in I don’t know how many years I’m not cooking! Lisa has decided that she wants to try her hand in the kitchen, and I’m really looking forward to it. She’s making us pineapple and rum chicken with lime, black beans and yellow rice. I can’t wait!

It’s going to be a scorcher today, and I think I’m going to spend most of it indoors. I’m going to go get a ride in before it gets too hot. If you decide to try those burgers for your next splurge meal, let me know what you think!
