Wrist update; Pineapple, Lime and Rum Chicken and Black Beans & Yellow Rice.

I’m excited about this week because I’m going to be able to do upper body workouts for the first time in 3 weeks! My wrist is feeling much better from the time off, and I’ve been very careful to use it as little as possible. For example, I’ve been using my left hand to polish the car and when I’m cleaning up around the house. I also took a suggestion from forum member “leftx” and tried using my left hand to control my mouse. Turns out it’s not nearly as awkward as I thought it would be. I’m not nearly as precise with my left hand, but when I’m just browsing the web or not in a hurry I’ll go ahead and move the mouse over to the left. I’m still thinking about trying a vertical mouse, too.

I have not filled the anti-inflammatory prescription yet. I’m going to start taking them on Wednesday, which is the first upper body workout of the week. Even though my wrist is feeling much better right now, it still feels “off” so it will be interesting to see how much the NSAID helps.

On the food front, I’ve got a couple of terrific, healthy and easy to make recipes for you this morning. As I mentioned yesterday, Lisa cooked dinner last night and it was incredible! She’s not cooked anything more complicated than oatmeal in years, but you’d never know it after last night’s dinner. Everything came out amazingly good – I was seriously impressed! Best of all, she said she really enjoyed planning and then preparing dinner and will be doing so again every week or two. Hey, I’ll take that! I love cooking, but a break every now and then is just fine with me.

Anyway, what Lisa made for us was a delicious Pineapple, Lime and Rum Chicken served alongside Black Beans and Yellow Rice. Give these a try, you won’t be disappointed.
