Grilled Chicken Soft Tacos

I’ve been very lazy in the kitchen this week. I think part of the reason is because Lisa has had to work late every night, and on my training days my post-workout meal #2 needs to be consumed before she gets home. I don’t enjoy cooking an involved meal for just me, so I’ve been eating easy to prepare meals like grilled chicken soft tacos. I just chop up some grilled chicken breast, salad greens, tomato and green onion, throw all that into a tortilla and add some fresh ground pepper and Cholula hot sauce. Of course you can get get as creative with the ingredients as you like. These are healthy, really tasty and super easy to prepare.

Astute readers may have noticed that I used flour tortillas. Unfortunately I only had flour tortillas in the house, so that’s what I went with. A better choice would be whole grain tortillas and some brown rice. I’ll be sure to have Lisa pick some whole grain tortillas when she goes grocery shopping this weekend.

Last night for dinner I had a little more flexibility with my meal timing because it was not a training day. I decided to wait for Lisa, and we elected to have our cheat meal a day early (like I said, I just have not been in the mood to cook for some reason). We had pork barbecue, which normally makes for a miserable night of sleep for me. Generally after a heavy, salty meal like that I’m up half the night drinking a ton of water and feeling hot and basically terrible. But that didn’t happen last night. So I started thinking about why that is, and I realized that normally I would be drinking alcohol with my cheat meal. I’ve not consumed alcohol in almost two weeks (go me!), and I think that’s the key here. Alcohol is a very strong diuretic, and it makes sense that combined with a salty meal it would result in dehydration. Last night I was extremely well hydrated, consumed no alcohol and continued to drink water right up until bed. I slept like a baby. Yet another benefit to giving up alcohol. Now I can have cheat meals every night! 😉
