Modification to Szechwan Shrimp recipe; Pond landscaping update.

Yesterday was a long day at work, but I did manage to squeeze in a good chest/delts/triceps workout in the late afternoon. For PWO meal #2 I made a little tweak to one of my favorite recipes, Szechwan Shrimp. The recipe itself is, in my opinion, perfect (old family recipe), so all I did was change the protein from shrimp to chicken. I just cut up a couple of raw boneless, skinless chicken breasts and stir fried those a little longer than I would have cooked the shrimp. This is the first time I’ve made this dish with chicken instead of shrimp, and I’m very happy with how it came out!

The woman who cuts my hair has been out on maternity leave, but this week she’s finally back. My hair has not been cut in something like two months, and it is looking very shaggy. I have an appointment this morning to get it cut, but of course I just got a phone call from my landscape designer; he’s going to be here preciously at the time of my haircut appointment. I guess I’m going to cancel the haircut because I need to be here to discuss the pond’s landscaping project. Hopefully she can get me in later today, because I’m looking pretty rough around the edges right now.

I’m very excited to see what my landscape designer comes up with for the pond. He started rattling off some random thoughts while we were on the phone, and I was dizzy by the time he stopped! I have a feeling that the pond is going to look incredible by the time he’s through. Hopefully we’ll have a list of the plants and palms he’s going to use sometime this week (maybe even today). He’ll be doing the landscape design and delivering all the plants, but Lisa and I are going to do all the planting this time around. Because he won’t have to schedule a big crew to plant everything, we could be looking at delivery sometime within the next week or so. I can’t wait!
