Pineapple, Lime & Rum Chicken w/ Black Beans & Yellow Rice


A healthy, easy to prepare and delicious summer chicken dish. You’ll love this one!


  • 6 boneless, skinless chicken breasts
  • 1 can (17 oz.) crushed pineapple in own juice
  • 1 oz. lime juice
  • 1 oz. light rum
  • 1 tablespoon sesame oil


  • Marinate chicken in rum and juices overnight in flat rectangular baking dish.
  • When ready to prepare place chicken to non-stick skillet and sear in oil until light cream color.
  • Place chicken back in baking dish and cover with marinade.
  • Bake chicken at 350 degrees until chicken is cooked through, about 20 minutes.
  • Turn on broiler for last minute or so of cooking if further browning is needed.


Yield:  6 servings. Goes great with Black Beans & Yellow Rice!
