Pineapple, Lime & Rum Chicken w/ Black Beans & Yellow Rice

Description

This is the perfect side dish for Pineapple, Lime & Rum Chicken.

Ingredients

  • 1 can chicken broth (use vegetable broth if making vegetarian)
  • 1 (5 oz.) package yellow rice mix
  • 1 tablespoon olive oil
  • 1 medium yellow onion, minced
  • 2 cloves garlic, minced
  • 1/2 green pepper, minced
  • 1 can(15 oz) black beans, drained
  • Salt & pepper to taste

Instructions

  • Bring broth to a boil.
  • Add rice to broth.
  • Reduce heat to a simmer, cover pot and cook 20 minutes.
  • Heat olive oil in a frying pan and saute onion, garlic and peppers until soft (3-4 minutes).
  • Drain liquid from beans and and heat though in a saucepan.
  • Mix bean mixture with rice and serve.

Notes

Yield: 6 servings. Goes great with Pineapple, Lime & Rum Chicken.
