Chicken & Lime Thai Stir Fry

Chicken & Lime Thai Stir Fry

Description

Another excellent stir fry, this one with a bold Thai flavor.

Ingredients

  • 2 8-oz boneless, skinless chicken breasts cut into small strips or bite-sized chunks
  • 2 bell peppers (1 red, 1 yellow or green) chopped into bite-sized pieces
  • 1 small yellow onion, rough chopped
  • 2 tablespoons vegetable oil
  • 1 ounce white wine

    Sauce Ingredients

  • 3 green onions, chopped
  • 4 cloves garlic, minced
  • 1 tablespoons Sriracha
  • 8 lime leaves, cut into strips (be sure to remove entire stem)
  • 2 tablespoons lime juice
  • 1/2 cup fresh basil
  • 2.5 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons toasted sesame oil
  • 1 teaspoon brown sugar

Instructions

  • Prepare the sauce by placing all sauce ingredients in a food processor or mini-chopper.
  • Process well to form a thick sauce or paste and set aside.
  • Put vegetable oil in a wok or large frying pan and set over medium-high heat. Add the onions and chicken.
  • Stir-fry 6-8 minutes, or until chicken is well cooked.
  • When stir-frying, add a little white wine whenever the wok/pan becomes too dry.
  • Add the bell peppers, and stir-fry another 2-3 minutes, or until the bell pepper pieces have softened slightly.
  • Turn heat down to minimum. Now add the sauce, stirring well to incorporate.
  • Do a taste-test for salt and spice, adding more fish sauce if not salty enough, or more Sriracha if not spicy enough.
  • If you prefer a “saucier” stir-fry, you can add a few Tbsp. of chicken stock, coconut milk, or cream.
  • Serve with brown rice, garnish with fresh basil.

Notes

Yield: 2 servings. The lime leaves are available at most Asian food stores in the frozen section
