Unbelievable Chicken

Description

The name says it all! This is some of the best grilled chicken I’ve ever had.

Ingredients

  • 1/4 cup cider vinegar
  • 3 tablespoons prepared coarse-ground mustard
  • 3 cloves garlic, peeled and minced
  • 1 lime, juiced
  • 1/2 lemon, juiced
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons salt
  • ground black pepper to taste
  • 6 tablespoons olive oil
  • 6 skinless, boneless chicken breasts

Instructions

  • In a large glass bowl, mix the cider vinegar, mustard, garlic, lime juice, lemon juice, brown sugar, salt, and pepper. Whisk in the olive oil.
  • Place chicken in the mixture. Cover, and marinate 8 hours, or overnight.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Place chicken on the prepared grill, and cook 6 to 8 minutes per side, until juices run clear. Discard marinade.

Notes

Yield: 6 servings. Recipe may be cut down if serving less people. Leftovers keep well in fridge and are excellent when cut up the next day and tossed into a salad.

  1. Delicious! I did have to substitute yellow mustard for the coarse ground because I forgot ran out a week or so ago before I started to make this up. I also swapped splenda for the brown sugar to eliminate those calories from the sugar. It turned out great! I’ll have to remember to get some coarse ground for when I do this again, though. Thanks, John.

    • Really, really good! Followed recipe except had a hard lime, so added the zest of the lime as well. Also, cut the chicken breasts into 1 1/2 inch cubes before marinating and grilled on skewers with onion, yellow and red bell peppers, crimini mushrooms, zucchini and Texas 1015 sweet onion. Basted the skewers with the remaining marinade as they grilled. Everyone loved it!

  2. I finally made this last night after wanting to for some time. I had to substitute yellow mustard and vegetable oil for the listed ingredients above. I marinaded 4 breasts overnight.

    For me, it fell short of ‘unbelievable’ but was very good. I would rate it a 7 but won’t do so until I make it with the correct ingredients to be fair. It was far better cut up in my salad this afternoon than it was last night with my roasted red peppers and broccoli. For some reason the flavor was more pronounced today than last night.
