Meat Loaf and Butternut Squash Puree

Description

A la P90X – good side dish with no fat.

Ingredients

  • 3 cups butternut squash
  • 1/2 cup fat free low sodium chicken broth
  • 3 tbsp minced shallot
  • 1 garlic clove minced

Instructions

  • Saute’ shallot and garlic in pot with water until soft.
  • Add broth and squash and simmer for 20 minutes/until soft.
  • Add mixture to food processor and puree.
