Turkey Meatloaf


A great tasting meatloaf!


  • 1.25 lbs 97% lean ground turkey
  • 6 Ryekrisp crackers
  • 1/2 cup Quaker oats
  • 1/4 cup egg beaters or egg whites
  • 1/4 cup nonfat milk
  • 1 carrot, grated or shredded
  • 2 cloves garlic, minced
  • 1 yellow or red bell pepper, diced
  • 1/2 cup onion, diced
  • 1/4 parsley flakes
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 cup ketchup


  • Put the Ryekrisp and oatmeal in a food processor and grind to breadcrumb consistency.
  • Combine Ryekrisp mixture in large bowl with all other ingredients, reserving 1/3 cup ketchup.
  • Put meatloaf mixture in a loaf pan coated with olive oil Pam cooking spray.
  • Bake for 45 minutes at 400 F.
  • After 45 minutes, coat top of loaf with remaining ketchup.
  • Let cool 10 minutes before slicing.
  • Slice into 6 one-inch slices.


Yield: 3 servings. Keep the extra in the fridge for leftovers!
