Enjoyed another old favorite recipe last night; It’s LEG DAY!

Over the past couple of weeks I’ve been dusting off some old recipes, mainly because I need pictures for the completely revamped Recipe section of the web site. Last night I made Spicy Grilled Cilantro Shrimp for the first time in ages, and it was terrific! This shrimp recipe is actually a modified version of the excellent Cilantro Salmon recipe (which is on-tap for this week–picture coming soon).
The way the Cilantro Shrimp recipe came about is one evening I was in the mood for the Cilantro Salmon, but all I had on hand was shrimp. I jazzed up the Cilantro salmon sauce with the addition of a fresh Jalapeno, some fresh ginger and a little red pepper (I love spicy foods!) and made a dipping sauce out of it. I also used smoked sun dried tomatoes instead of fresh tomatoes which gave the sauce a nice tangy/smokey note. This is a really good sauce with basic grilled shrimp, and I also like to dip my broccoli in it.

Yesterday’s weekly progress report has me feeling especially positive and motivated. Almost all my cardio over the past week was mountain biking, and I think that really revved up my metabolism. All weekend long I was being really silly, cracking non-stop jokes and generally acting like a hyperactive kid. I almost made Lisa shoot water from her nose, which has been a goal of mine for more than 20 years. She swears it will never happen, and man you have no idea how hard I have tried. One day, Lisa… one day.
My last two leg workouts have been particularly exceptional, and so I have a very tough workout ahead of me today if I’m going to keep the streak alive. I’ll be adding weight to every exercise and I’m going to hit all 320 reps or pass out trying.
