Happy Independence Day!

Happy Independence Day!

It’s America’s 235th birthday today! I still remember visiting Washington DC during America’s Bicentennial in 1976; I’ve never seen so much red, white and blue in all my life! It’s hard to believe it’s been 35 years since then. Man, now I’m starting to feel really old…

We started our 4th of July celebration yesterday. Last night for dinner I made a riff on Bobby Flay’s Santa Fe Burgers: lean ground beef patties, peppers roasted with olive oil, salt and pepper, blue corn tortilla chips and pepper jack cheese. I usually use Poblano peppers when making this recipe, but last night I used a mix of Sweet Banana, Hot Banana and Anaheim Peppers right from our garden with excellent results. These burgers are deceptively simple, and the taste is not to be believed.

Lisa also made the most amazing potato salad! I’ve never–not ever–liked potato salad, but I loved the one Lisa made last night. It was very non-traditional: she used far less mayonnaise than any potato salad I’ve ever seen, and it had bacon and fresh apple in it. Good job, Lisa!

After dinner we went out back to relax by the pond, and there were several people shooting off fireworks around us. I grabbed my camera and my tripod and tried my hand at fireworks photography. I got a couple of decent shots, and I think I have the basic technique down now. Hopefully tonight I’ll be able to get some much more impressive shots now that I have a bit of a feel for how to capture the show. I’ll post any new pictures on Facebook and in my rapidly growing photography journal, In The Blink of an Eye. I’m also posting my stuff to Flickr, so feel free to add me as a contact if you’re on there.

I’m not sure what we’re going to do today. I’d better get off the computer and go find out. I hope my fellow Americans have a FUN and SAFE 4th of July celebration!

  1. My mother-in-law introduced me to fresh granny smith apples in tuna salad several years ago. It’s amazing!!! So I’m sure it was great in the potato salad too.

    Give the granny smiths a try in some tuna salad, you will not be disappointed.
