Acapulco Chicken Stir Fry

Acapulco Chicken Stir Fry


This healthy dish is full of bold and spicy Latin flavor. Wimps need not apply!


  • 2 7-ounce boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 Tablespoons chili powder, divided
  • 1 Tablespoon olive oil
  • 2 Large bell peppers, diced
  • 1 Large yellow onion, chopped
  • 2 Serrano peppers, minced
  • 1 Jalapeno pepper, minced
  • 2 Medium tomatoes, diced
  • Salt and pepper to taste


  • Season chicken pieces with 1 tablespoon chili powder, salt and pepper.
  • Heat oil in wok (best) or large skillet over medium high heat.
  • Saute seasoned chicken pieces for 3 to 4 minutes until no longer pink.
  • Remove chicken from wok with a slotted spoon and keep warm.
  • In same wok stir fry bell pepper and onion until soft.
  • Add Serrano peppers, jalapeno peppers, tomatoes, remaining 1 tablespoon chili powder and hot pepper sauce.
  • Stir fry for an additional 2 – 3 minutes; add chicken and stir fry for 1-2 more minutes.


Yield: 2 servings. Serve with brown rice.

To raise the heat, use more Serrano peppers and hot sauce. To lower the heat (not recommended) use Jalapenos in place of the Serrano peppers.
