Excellent dinner last night; Legs killing me, might ride anyway.

As I mentioned in yesterday’s blog, Lisa cooked last night and she made one of our favorites, Pineapple, Lime & Rum Chicken. As promised, I took a new picture. The new photograph is considerably better than the old one, but it’s still far from fantastic. Listen, I was starving and so proper plating and photography were distant concerns: I wanted to sit down at the table and dive in!
The meal came out even better than I remembered it, and we had to force ourselves to stop eating. After we finished eating it took a lot of willpower to not polish off the remaining rice and beans; I really wanted to, and so did Lisa.
I know what I’m having for lunch today. 😀
My leg workout yesterday was very good, but this morning my legs are feeling tired and sore. I want to go mountain biking so bad right now, but I just don’t think my legs are up for it. I’m still strongly considering scaling way back on my weight training for the next few months (especially legs) so I can ride more. While not the same as training with weights, mountain biking is a great leg workout. It would be an interesting experiment to stop lower body workouts for a few months…
I really should get some cardio in this morning, but the idea of sitting on the recumbent bike doing LISS sounds terrible compared to hitting the trails. Even though my legs are hurting, I may go ride anyway. I’ll see what I feel like doing after I eat, which is what I’m going to do right now!

Can you freeze these as leftovers for a later date? Does it retain the taste?

Freezing would likely be fine. What I do, though, is throw the leftover breasts into the fridge in a large Ziploc bag and eat them over the next couple of days. They are excellent cold.
