Lisa made dinner again last night; New Recipe added!
Lisa found a new chicken recipe that she wanted to make for me last night, and I sure wasn’t going to argue! The recipe is very easy to make, and there is not a lot of prep involved.
We changed the recipe a little bit because I thought it needed a crunchy component. The sauce is sweet and tangy (Dijon mustard, maple syrup and rice wine vinegar), so I suggested adding some dry roasted almonds at plating. We agreed that the almonds worked very well with the tangy sauce.
The sauce does have a fair amount of maple syrup (sugar carbs), so while I wouldn’t consider this an all-out cheat meal, it’s not exactly cutting food, either. Even with the maple syrup a 7-ounce breast comes in at under 400 calories (and is actually even fewer calories than that because not all of the sauce is consumed).
We served the chicken breasts with steamed broccoli and brown rice mixed with chopped sweet peppers. A definite winner here, and so I added Mustard, Maple and Rosemary Chicken with Almonds to the Recipe section.
