Look at all these Poblano peppers!

One of my favorite splurge meals is a slight variation on Bobby Flay’s amazing Santa Fe Burger. I make this burger with lean ground beef, blue corn tortilla chips, pepper jack cheese and poblano peppers roasted with olive oil, salt & pepper. I usually serve the burger with roasted red potatoes. As splurge meals go, this one is far from over the top, but it’s incredibly delicious.

Because we love this burger so much, this year we decided to add Poblano peppers to our ever-expanding herb, tomato, fruit and pepper garden. Not only are Poblano peppers pretty expensive, sometimes our local grocery doesn’t have them in stock, or the ones they have look pretty bad. So we planted two Poblano plants, and it’s become obvious that they are going to be big producers. The first of the Poblanos are ready to harvest, and so tonight I’ll be making these awesome burgers for the first time this year. I can’t wait!

I’m actually feeling a bit under the weather this morning. I’ve got a slight sore throat, and I’m feeling a little off. Not sure what that’s about, as I’ve been getting plenty of rest and eating very healthy.

Even though I’m not feeling 100% I’m going to go get a ride in this morning. I’ve barely been on the bike this week, and I really need to get some miles in. Hopefully when I get out on the trails I’ll start feeling better and not worse.
