New Recipe: Brown Sugar-Glazed Salmon with Sweet Pepper

Last night I knew I was going to prepare salmon for dinner, and originally I was going to whip up one of my favorite salmon recipes, Broiled Salmon with Mustard & Dill. As dinner time approached, however, I realized that I had a little bit of a sweet tooth and was also in the mood to try something new. I decided to hunt down a salmon recipe with some sort of a sweet glaze on it. I found a couple of recipes that looked great, and I prepared one last night (I’ll be trying the other one sometime soon).
The recipe I selected, Brown Sugar-Glazed Salmon, is a very simple and easy to prepare dish, but it tastes amazing! I served the salmon with steamed brown rice mixed with colorful chopped sweet peppers and chopped green onion. As I was plating the salmon I decided to put a little of the chopped sweet pepper/green onion mixture on top of the salmon fillets. This little tweak not only added some nice visual appeal, the taste really worked with the glazed salmon. I decided to make my little modification part of the posted recipe.
The amount of brown sugar in this dish is very small: just .75 tablespoons per serving. This dish is less than 400 calories, and is pack with protein and healthy fats. I personally would not eat this dish while cutting body fat, but as a maintenance meal this is something I’ll happily eat all the time.
