Lazy 4th of July: fireworks and excellent burgers!
We had a fun 4th of July celebration yesterday. I was feeling extraordinarily lazy, and so I didn’t do anything more strenuous than grill some burgers and chicken.
We had lots of poblano peppers ready to harvest, so I grilled up a variation on Bobby Flay’s Santa Fe Burger. I make this burger with lean ground beef, blue corn tortilla chips, pepper jack cheese and poblano peppers roasted with olive oil, salt & pepper. I also added a little cheddar cheese yesterday, too.
Our two poblano pepper plants have produced far more peppers than we ever expected them to. Not that it’s been a problem: we’ve not a single pepper go to waste. Up until this year we’ve always purchased poblanos at the store, and those suckers are not cheap. If I recall correctly they run around two bucks each. Our two plants have easily produced more than 40 peppers so far this year, and they are showing no signs of slowing. Not bad for a couple of plants that cost about the same as one pepper at the store.
I’m not sure if I’m going to have time to get a ride in this morning or not. I’ve already accomplished a couple hours of work this morning, so I might reward myself with a ride before I get back at it.
