My goodness, it’s another amazing morning here in Central Florida! I was starting to think we skipped spring and went right to summer, but these past couple of days have brought us a nice–but certainly brief–taste of a season we generally don’t see much of here in the subtropics.
Speaking of taste, this morning I’ve got a new recipe for you all! Lisa made this dish for me about a month or so ago, and it was so good that I said we should have it again so that I could take a picture and post it on JSF.
The recipe is ridiculously easy to make, and the taste is outstanding if you like a mix of sweet and spicy. It’s got chicken thighs (breasts would likely work, too), apple butter, Chipotle peppers in Adobo sauce, garlic, onion and Worcestershire sauce.
Last time Lisa made it she served it with brown rice and peas, but this time she made wild rice. Both rices went well with the chicken, but I’d have to give the nod to the wild rice.
This is a borderline cheat meal (personally I count it as one). There are a lot of sugar carbs in this dish from the apple butter. I would not eat this meal while actively trying to lose fat (except as a planned cheat meal), but on a maintenance diet I think it’s fine.
