New recipe: Spicy Lime Tilapia with Baby Spinach and Asparagus!
I’ve got a great new recipe for you guys today: Spicy Lime Tilapia with Baby Spinach, Asparagus and Scallions!
A couple days ago my friend Jim Beyer told me about this recipe, which he gave very high marks. I reviewed the recipe, and it looked fantastic–I couldn’t wait to try it! Luckily Lisa was at the grocery yesterday, so I asked her to pick up some fresh tilapia, asparagus and baby spinach.
The recipe calls for 4-ounce fillets, but I used 6-ounce fillets for a little extra protein (this adds about 10 grams of protein/55 calories). Lisa and I both love spicy food, so I tripled the amount of red pepper flakes (1.5 teaspoons instead of 1/2 teaspoon). I saw some people comment about how spicy this dish is, and had to laugh. Even using triple the suggested amount of red pepper flakes Lisa and I both felt the heat was there, but far from excessive. If you’re sensitive to heat, I would use the amount of red pepper flakes called for by the recipe (or even a little less, I suppose). If you like your food bold, go to town.
The dish came out amazing! About the only thing Lisa and I said to each other at the dinner table last night was, “Mmmmmmm!” and “So good!”–we were too busy stuffing our faces to talk!
At just 201 calories (256 calories using a 6-ounce fillet), this light and flavorful dish is a perfect fit for any healthy diet. Also, the prep is so fast and easy that even novice chefs will have no problem at all.
