Good week; More on roasted root veggies; Forum work continues.
It’s been another excellent week of riding, lifting (yeah, I still do that!) and clean eating. My weight is down–albeit just slightly–from last week, but that’s what I’m after: slow and consistent scale weight loss over the next few months (see “2015 cut and beyond: mistakes were made…” for my mea culpa).
I received some great feedback about yesterday’s blog–thanks! Looks like quite a few of you are fans of roasted root vegetables, too.
A JSF reader emailed me and asked if those vegetables were the entire meal, or a side dish. Great question, and I meant to mention that I almost always use them as a side dish. For example, on Wednesday I severed the roasted root vegetables with a fantastic citrus-marinaded chicken recipe, Grilled Herb Chicken. I’ve been preparing this excellent recipe on a regular basis since the start of my transformation all the way back in 2003, and I love it as much now as I did back then.
We always seem to make way too many roasted veggies and, as usual, there were some leftovers. I ate them cold (they are just as good cold as they are hot, IMO) for lunch yesterday, with nothing else. So they work well as a light meal, too.
JSF member “zucc” passed along a great find: a lower sodium version of the awesome McCormick Grill Mates Montreal Steak Seasoning (25% less sodium). I’m definitely going to have to give this a try, as I often would like to add more of this excellent seasoning but have to hold back because the original version is very salty for my tastes. Thanks, zucc!
Finally, I wanted to mention that work on the new JSF Forums is ongoing. Tim and I are making great progress and getting closer to a closed beta period. I will probably invite JSF members who have an upgraded membership to try out the new forum and provide feedback before it is officially launched. I’ll send out the beta invitation emails as we get closer to that phase.
