Another excellent vegan dinner, courtesy of Lisa!
Last night Lisa prepared another amazing meal for us: Sweet Potato Chickpea Buddha Bowl. This dish is 100% vegan (no animal products at all), and it was absolutely incredible!
The simple tahini sauce (tahini, maple syrup and lemon) provides a surprisingly perfect sweet counter to the savory vegetables and crispy chickpeas.
And what a fantastic array of veggies! The recipe calls for red onion, sweet potato, broccolini, and kale, and Lisa added spinach, cauliflower and chard.
This is a super healthy dish, and the taste is out of this world. In fact, this may be my favorite of all the dishes Lisa’s made over the past week. This is definitely one we’ll enjoy again and again.

It’s amazing how much my tastes have changed over the last 20 years. When I was a vegetarian during most of the 1990s I, somewhat ironically, didn’t like many vegetables. These days I love just about all of them. The only vegetables I don’t really care for are mushrooms and lima beans, and I’ll even eat those if they are part of a larger dish.
