In yesterday’s blog I asked for some good vegetarian and vegan lunch ideas, and… wow! Dozens of outstanding suggestions were posted in the comments section. Thanks everyone! I know that many JSF readers will benefit from your advice as much as I have.

Thanks to all your suggestions I’ve gone from wondering what my “standard” vegetarian lunch will be, to completely reconsidering my strategy to eat the same lunch almost every day.

Eating the same lunch every day has always worked well for me–and I never used to mind–but lately I’ve been embracing change. In fact, the lunch thing is sort of metaphoric: so much is changing in my life right now, and fighting it is counterproductive and wastes energy. Change can be scary, but at the same time it’s exciting. I’m really trying to focus on the later half of that statement.

Lisa and I have decided that rather than set a “vegetarian” date, we’re simply not going to purchase any more animal-based products. So, once the chicken we have on hand is gone, we’re done eating chicken. Same goes for the seafood (salmon and canned tuna): when that stuff is gone, it’s gone and will not be replaced.

As you can see, there’s not a whole lot left. In addition to what’s in the garage freezer, we have some chicken and salmon in our house freezer. I’d say that we have about 2-3 weeks worth of chicken, and 3-4 weeks worth of salmon left. Apart from some canned tuna and stuff like chicken stock, that’s it. We’ll use what we have (not into wasting food), but I’m looking forward to when it’s gone.
