Quinoa for lunch yesterday, also prepared Taboule wheat salad! Near East Taboule mix. I also tossed in olive oil, lemon juice, black olives, red kidney beans and fresh tomato.

In yesterday’s blog I mentioned that I was probably going to have quinoa for lunch, and that’s exactly what I prepared. I tossed in some olive oil and black olives, and when it was done cooking I woofed down a massive bowlful. 🙂 One of the nice things about quinoa is it’s remarkably satiating. Eating 100% vegetarian this week; Amino acids & athletic performance. The 20 amino acids.

Even though we still have some chicken breasts and seafood left in the freezer (it will not be replaced once it’s gone), I purposely didn’t defrost any chicken over the weekend. Awesome vegan soft taco recipe with a funny story behind it Tofu soft tacos with onion and bell pepper. We added some of the sauteed veggies and a little tomato to the rice.

Saturday night Lisa and I were planning to work on a new dish together: a spicy Jamaican jerk stir fry, using tofu. Awesome vegetarian lunch ideas; Meat almost gone, won’t be replaced. This is the last of the meat and seafood in our big garage freezer.

Facebook comments live, with a twist; Mobile bugs resolved. JSF just got a lot more interactive.
